Lavender Lemon Cupcakes
Our Lavender Baking Extract is ready and I just had to make something for Easter with it. I was debating between a lavender cheesecake and lavender cupcakes and ended up going with a Lemon Lavender Cupcake recipe from The Cake Blog that you can find here.
I am truly impressed with the outcome. I typically bake cakes that come from a box but these turned out so good and fluffy! And honestly not that much harder to make. I highly recommend the recipe and will be trying a lot more from The Cake Blog!
I am not a professional baker, A.D.D. plus 8 kids just doesn’t lead to the prettiest cakes but man do they taste good! The cake is fluffy and just the right amount of lemon. The frosting has a hint of floral lavender without being overpowering. It is such a unique combination and can we just all agree that lavender purple looks so pretty with lemon yellow?
To make these fun cupcakes you will need basic ingredients plus 3-4 lemons, lavender extract and culinary lavender for decoration. I had everything in my cupboard except the lemons.

For the Lemon Cupcakes_
unsalted butter, room temperature
sugar
sour cream
vanilla extract
grated lemon zest
egg whites, room temperature
all-purpose flour
baking powder
salt
milk
water

fresh lemon juice
For the Lavender Frosting_
salted butter
shortening
powdered sugar
water or milk
vanilla
Purple food coloring, optional
Lemon slices, cut in half
